This week's beans

Everything is roasted to order in 15 lb batches. Bags carry the roast date, never a "best by." If a lot sells through, it's gone until the next harvest.

Kiriga AA

Nyeri, Kenya · washed

Blackcurrant · cane sugar · bergamot

A washed lot from the slopes above Nyeri, roasted light to keep the fruit forward. Bright without being sharp; it settles into a syrupy finish as the cup cools.

Hambela Buliye

Guji, Ethiopia · natural

Strawberry · jasmine · stone fruit

The natural we've been dialing in all month. Loud and floral at the start, then it rounds out into something jammy. Best as pour-over, a touch coarser than you'd expect.

San Fermín

Huila, Colombia · washed

Red apple · brown sugar · cocoa nib

Our everyday washed Colombia, from a co-op of growers we've bought from for six years running. Forgiving in any brewer, sweet through and through. The one we hand people who say they don't like black coffee.

$18 12 oz

Las Marías

Santa Bárbara, Honduras · honey

Dried apricot · honey · almond

A honey-process lot with the body of a washed coffee and a little extra sweetness. Roasted a hair past the Kenya — enough to round the edges without losing the fruit.

$19 12 oz

Finca El Naranjo

Acatenango, Guatemala · washed

Baking chocolate · orange peel · walnut

Grown on volcanic soil high enough that harvest runs late into spring. Deep and chocolatey with a citrus lift on the back end. Holds up beautifully with a splash of milk.

$20 12 oz

Cerro Azul Decaf

Cauca, Colombia · sugarcane EA

Milk chocolate · dried fig · molasses

Decaffeinated with sugarcane ethyl acetate, which keeps far more of the cup intact than older methods. Rich and a little sweet — the rare decaf we're happy to pull as an espresso.

Burnside Blend

Brazil + Colombia + Ethiopia

Dark chocolate · toasted hazelnut · cherry

Our house blend and the one in the hopper at the café most mornings. Built for espresso but happy in a moka pot or a big French press. Comfortable, balanced, never bitter.

$17 12 oz

Nightshift

Sumatra + Guatemala

Cedar · dark cocoa · pipe tobacco

Our darkest offering, for people who want their coffee to taste like coffee. Wet-hulled Sumatra for body, washed Guatemala to keep it from going flat. Made for cream and a slow morning.
