About Meridian

A small roastery on the east side, run by people who'd rather do one thing carefully than ten things at scale.

Meridian started in 2014 on a five-kilo drum roaster wedged into the back of a bike shop, because that was the only space anyone would rent us. Eli had been roasting at home for years and finally admitted he liked it more than his actual job. The first customers were the bike mechanics, who got their coffee in exchange for not asking too many questions about the smoke.

Twelve years later we've moved twice, traded up to a proper twenty-kilo roaster, and learned roughly a thousand things we got wrong at the start. What hasn't changed is the size of the thing. We're deliberately small. We roast what we can sell in a week, buy green coffee a few bags at a time from growers we actually know, and we've never once printed a subscription form. If that makes us harder to find than we should be, we've made our peace with it.

How we think about it

We're not chasing the lightest, brightest, most extreme cup on the menu. Some weeks the best coffee on our shelf is a gentle, chocolatey Colombia that wouldn't win a competition and would make most people very happy on a Tuesday. We try to roast each coffee to be the best version of itself rather than to fit a house style, which means our shelf doesn't taste uniform — and we like it that way.

The goal was never to be the biggest roaster in town. It was to make coffee we'd be glad to drink ourselves, and to still recognize the place in ten years.

We write things down in the journal when we learn something worth passing on — how we dialed in a new lot, why we stopped using a word, what a trip to a co-op actually looks like. None of it is secret. Good coffee is mostly attention, and attention is free.
